FV Shin-Sen-Gumi, sit at the bar and enjoy an amazing bowl of ramen and green tea. I’ve eaten alone there plenty of times. Kappo Honda is second and right across the street from shin sen gumi as well, also eat at the bar.

Mah-Kin Thai restaurant in downtown HB on Olive and Lake. Great Thai and Japanese food. Or if you venture to Fountain Valley next to HB; Kappo Honda Japanese izakaya or Tsuruhashi Japanese bbq.

I like Ikeda on Beach. Also, Fortune Cookie, which isn't a sushi joint specifically, has very good sushi. They're on Brookhurst along with Kappo Honda. They're good, but you might not like the long wait to get in.
