Nep Cafe does a fusion Vietnamese breakfast. I know some people think that brand of restaurants is overrated (it’s another Kei Concepts place) but I will say it’s probably more unique to Irvine and unlikely to be in TN. I will say I prefer the Japanese-Italian fusion at Ini but they’re in FV.
